When I think of granola, I think of that one commercial where the guy is looking out to the distance outside of his tent just massacring the heck out of his jaw with his granola. His family was probably covering their ears with their pillows trying to stay asleep.
Currently while I chew my granola, I’m looking at my children stepping all over my decor pillows with their dirty feet trying not to step in the “lava.” I’m so delighted by its lightly sweet and nutty flavor that I hardly notice the chaos going on around me. So basically I’m telling you that this is the perfect mom snack. I’m also telling you that this is homemade granola. So you won’t have to go into the store to buy some during the great Coronavirus clusterfu## of 2020.
Making homemade granola is so easy and so versatile. You can serve it on top of yogurt, ice cream, oatmeal, or just in the palm of your hand. I personally like to splash almond milk over mine, sit down and watch my children destroy everything.
This recipe is adapted from a Better Homes and Garden’s version I came across years ago when my husband, Glen, was in residency. I made it for him but with quinoa instead of oatmeal and, as you might have already guessed, it sort of never made it to work with him. I ate it.
This recipe has oats but you can either swap for quinoa or a mixture of both. Either way would be great! It keeps in the fridge for two weeks, making this a great staple to have in your fridge for your family. Here’s some pictures for further convincing.
Recipe:
- 3/4 cup raw oats
- 1 cup raw seeds of choice (slivered almonds, pumpkin, pistachios, pecans, etc.)
- 1/4 cup flax seed (I used ground flax)
- 1/4 cup wheat germ
- 1/4 cup honey or maple syrup
- 2 tbsp canola oil
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup dried fruit of choice (I used banana chips, cherries, golden raisins and apricots)
In a large bowl combine oats, seeds, flax and wheat germ. Microwave the honey for 20 seconds and stir in the oil, cinnamon and salt. Pour honey mixture over nut and oat mixture and stir to combine. Turn mixture out onto a large baking pan and bake 20 minutes until golden, stirring twice during baking. Once it comes out of the oven, stir in your dried fruit and other mix-ins (chocolate chips, peanut butter chips, sprinkles, etc.) and cool 15 minutes on the pan. Turn granola out onto a piece of foil and cool completely. Store in an air-tight container or bag in the fridge for up to two weeks.
